With over 24 years of experience in the food industry and academic areas, I have specialized in the valorization of by-products to promote sustainability and circular economy practices. As a Chemical Engineer, my expertise lies in developing innovative solutions for the upcycling of food waste, optimizing industrial processes, and implementing sustainable strategies to enhance resource efficiency.
I have worked extensively in research, education, and industry, leading projects focused on transforming food by-products into high-value ingredients. My background includes serving as a Director and Dean at a university in Argentina, where I contributed to academic and industry-driven advancements in food technology.
Currently, I am based in Canada, where I am expanding my work in the upcycled food sector, providing consultancy services and advocating for responsible resource management. My mission is to bridge the gap between food manufacturers and sustainability by helping businesses integrate upcycling strategies that add economic and environmental value.
