Posted By: Falon McGinty Member Portal Resources ,
This is the third and final webinar in our UFF Research Fellows Presentation series. During these presentations, our Research Fellows will present their research findings and progress exclusively to UFA Membership. UFA Members get an advanced look at this research before it gets published and get an opportunity to interact directly with the researchers!

Dr. Topher McNeil & Dr. Simona Grasso share their research on the following:

Consumer Awareness of Upcycled Foods in US & China: This survey study compared US and Chinese consumers in terms of their understanding and knowledge of upcycled foods, their reasons to try upcycled foods, willingness to try and to buy, liking, attractiveness and likelihood to purchase vs conventional foods. It is the first study to use a co-creation approach to understand which by-products and upcycled food combinations are preferred.

Upcycled Food Business Case Study & Supply Chain Challenges: Through a case study and subsequent survey of UFA members, we have examined the advantages and disadvantages of various supply chain and partnership structures used by upcycled food companies to source ingredients and materials. Exploratory in nature, this survey highlights common sourcing challenges and concerns within the upcycled food industry and strategies used by upcycled food companies to drive growth.
